Welcome back to Immeasurably More! I’m coming back at you with another fun Friday blog post — this time, we’re talking all things FOOD and what I eat in a day!
I never skip breakfast — I’m one of those gals that believes that breakfast is one of the most important meals of the day! To begin my day, I start out with a bit of coffee (around 4 ounces). As for food, I bounce between a few different things.
Greek Yogurt & Granola — excellent probiotic/live cultures and source of protein, vitamins etc. I love spicing this up by adding my favorite granola, coconut and some fruit.
Egg Whites & Toast — I’m weird and don’t always like the task of yolk, so scrambled egg whites are so yummy to me. I whip up some eggs and have a little bit of toast!
I’m a snacker! Raise your hand if you’re with me! Some of my favorite snacks are granola bars (Belvita or Cliff), trail mix, fruit and crackers. Also, I have to point out that I keep my Hydroflask water bottle on me ALL day and probably drink a couple (or more) of my 40 oz. bottles a day! It’s important for you overall to stay hydrated. 😉
Some days, I eat a really big lunch and other days I don’t. It kind of just depends on my mood! But for the most part, I switch between these two options for lunch.
Sandwich, Fruit, Veggie — This is a really simple and “on-the-go” lunch. I make half of a sandwich, adding carrots and some sort of fruit on the side. My go to rule for lunch/dinner is to always have fruits and veggies with the main dish.
Leftovers — Let’s be real. This is convenient AND yummy!
This varies everyday, but the same “rules” apply for every meal. We like to stick with one main meat/fish, loads of veggies and one grain/starch if we’d like. (I don’t promote starving yourselves or doing crazy diets, unless your health demands it. My diet is eating everything in moderation!) This varies, but here are a few examples of a typical dinner!
Fish, Stir Fry, Veggies — This is my Asian heritage coming out in it’s true colors! I like getting Costco’s Tilapia (white fish), seasoning it and popping it in the oven. It’s very light and doesn’t taste fishy! I love rice, so I normally make that as well. And to top it off, I like heaping amount of stir fry veggies: broccoli, peas, peppers, carrots etc.
Soup — This is what I’m having tonight actually, haha! A few of my favorite soups are: Creamy Chicken Gnocchi, Sausage and Kale Soup and anything with lentils or barleys!
Pork Roast, Wedge Potatoes & Salad —This is easy and delicious! I like to get a frozen pork roast, season it and pop it in the crockpot on low all day. By the end of the day, it’s ready to go. My favorite way to eat this is with wedge potatoes, seasoned with garlic and tossing together a quick salad.
